❏ Close gate
❏ Grind out residual coffee + vacuum
❏ Remove hopper and return beans to storage container
❏ Vacuum top and around counter
❏ Wash hopper with soap + water (no abrasives)
❏ Place hopper on top of the espresso machine when it is completely dry

Espresso Machine
Important
❏ Run group heads and scrub with brush tool to remove coffee grounds
❏ Remove baskets from portafilters. Soak portafilter and baskets in a bucket with an oxygen cleaner for 30 minutes. Do NOT soak portafilter handles.
❏ Remove drip trays and drains, wash and sanitize
Backflushing Group Heads
❏ Add oxygen cleaner to blind portafilter basket
❏ Run grouphead for 5 seconds then let rest for 5 seconds
❏ Repeat procedure 5 times
❏ Repeat above procedure with water for each group
Steam Wands
❏ Purge each steam wand
❏ Mix a solution of cleaner and steam the solution until hot
❏ Soak steam wands (using milk pitcher) in oxygen cleaner or milk cleaner overnight
