Sidamo Washed Tasting Notes
This coffee is vibrant with zesty citrus notes including lime, meyer lemon, and bright green apple. Sweet notes of raw and brown sugar are abundant throughout. Apricot, honeysuckle, and stonefruit notes give way to fragrant floral notes of chamomile, gardenia, and green sencha tea to complete the cup.
About The Producer
This coffee is sourced from the Sidamo Zone, contributed by members of the Ayla washing station, operated by Testi Specialty Coffee. Approximately 800 farmers cultivate the coffee that went into this lot. They operate on small plots averaging just half a hectare (~1.25 acres) each. In addition to coffee, these farms also grow staple food crops for household and local consumption.
The cooperative nature of the Ayla washing station is vital for the small producers who supply it as well as the surrounding community. The washing station has contributed to the construction of several schools as well as building vital infrastructure to deliver clean water and electricity to the area. The coffee was processed under the guidance of Faysel Abdosh, who oversees both coffee and community development operations. This lot was hand sorted by the producing families before being fully washed and fermented for between 36 and 48 hours then dried on raised beds.
