Tasting Notes

This is the quintessential top quality washed Ethiopian coffee: sweet, bright, fruity, floral, and complex. The coffee opens with bright notes of white grape, which transforms into peach and apricot as the bright acidic notes mingle with sweet caramel notes. The coffee finishes with sweet notes of caramel and abundant floral notes including honeysuckle and night jasmine.

About The Producer

This coffee comes from smallholder farmers in Yirgacheffe. More specifically, farmers near the Chelbessa Washing Station. The washing station is family owned and operated and is producing some phenomenal lots of coffee.

This particular lot of coffee was fully washed before being wet-fermented for 30 hours. The resulting coffee was dried on raised beds.

How To Brew This Washed Process Single Origin Coffee

We recommend using around a 1:14 brew ratio for this coffee. To highlight the fruit notes, it is best to use much cooler than usual water- between 185 and 195°F for no longer than three and a half minutes.

Ethiopian comfort

Nice! The beans in the bag I bought were very uniform in size and quality, were evenly roasted to a beautiful golden-brown hue, and had an inviting aroma. The flavors in the coffee I brewed were very Black Oak. Chelbesa is an Ethiopian with all its sweetness and citrus but many of the rough edges in this coffee have been muted to deliver a cup that is smooth, pleasurable, comforting, and easy to drink. This is not the most 'distinctive' Ethiopian I have tasted but sometimes you just want a cup of Black Oak in your morning. Thanks to everyone at BOC for the care and attention they took in delivering these beans to my doorstep. Chapeau!!
