Bright raspberry, cranberry, and cherry along with notes of guava, banana, and pineapple make up the opening notes of this extraordinary coffee. Dark chocolate abound, creating the impression of fruit ganache and liquors as they mingle with the fruit tones.
About The Coffee Producer
This coffee is produced by the Bayter brothers on their farm El Vergel. The farm is located on the slopes of Nevado del Ruiz, a glaciated volcano with a peak nearly 17,500 feet above sea level. The volcano creates a unique microclimate for growing coffee.
The farm produces a wide variety of some of the most sought after coffee varieties in the world. Including the red and yellow caturra varieties that compose this lot. In addition to the finest varieties, the farm specializes in unique processing methods. This particular lot was fermented in anaerobic tanks for between 48 and 60 hours with a curated culture of microorganisms before being dried over a period of 45 days to enhance the complexity and balance of the coffee.
How To Brew This Unique Coffee
A 1:14 brew ratio with a medium grind and 198-202℉ yields delicious and well balanced cups.
