The best version of the classic Colombian washed coffee profile: bright green apple and white grape acidity with loads of turbinado and brown sugar sweetness. Green herbal notes of cola and spice round out the cup.
About The Coffee Producer
This coffee was produced by the same small farmers that produce some of the best coffees in Colombia. Few, if any, of these farms are capable of processing all of their harvest in the extremely labor and infrastructure intensive methods used to produce attention grabbing, wildly fermented coffee lots. Although most of the coffee produced on these farms is of top quality, labor, infrastructure, and demand constraints still demand that the majority of their coffee be processed with more traditional milling methods that, in turn, produce the more traditional flavor profiles. This coffee represents a particularly nice batch of one such cooperative-produced lot of coffee.
How To Brew This Unique Coffee
We recommend using around a 1:14 brew ratio for this coffee. To highlight the fruit notes, it is best to use water around 205°F for no longer than three and a half minutes.
