Roast level: Medium/Light
Tasting notes: Stunningly sweet, rich medium dark chocolate with a touch of acidity to round out the chocolate with a hint of black cherry fruit.
Producer notes: Located in the São Sebastião da Grama region of the Sao Paulo state, Fazenda Rainha is a multi generation farm with a history of producing high quality coffees. Farm manager José Renato Gonçalves Dias and his family have grown coffee on this land since 1890. Fazenda Rainha has been at the forefront of the specialty coffee movement and its growth away from commodity grade production. A symbol of this ramp up in quality is the Cup of Excellence Competition. Started in Brazil in 1999 to bring recognition to farmers who grow crops of exceptional quality, Fazenda Rainha has been a finalist eight times, including winning the competition in 2011.
What makes the coffee from Fazenda Rainha so consistently excellent? First, there are a few geographic and biological factors including the excellent climate, favorable altitude and the selection of Yellow Bourbon variety. Secondly, the expert and diligent management of the farm. Because of the challenging topography, Rainha coffee shrubs are harvested with hand held pickers. During the careful drying process the coffee is laid on cloth to avoid ground contact. Extreme care is then taken to carefully dry the product to prevent spoilage and off flavors.
Finally, the top notch farm management extends beyond the coffee plants to the workers and environment around the farm. If the 120 plus years of consistent production isn’t enough to prove sustainability, the farm is interplanted to increase biodiversity. Workers on Fazenda Rainha are provided with health care as well as schooling for the children of the farm’s residents. Perhaps most interestingly, the farm has a stunning chapel designed by famous Brazilian architect Oscar Niemeyer. The modern chapel has smooth modern lines and resembles a white whale breaching the surface of the water. One can only speculate the beautiful chapel’s effect on coffee quality.

A cup of coffee is practically a religious experience for us. We revere it, we crave it and we anticipate brewing and drinking it every day. Every coffee has a story, a history of soil, people and culture that make each one special. And it’s that combination that keeps us curious to learn about and eager to experience the next cup.
Even here in Northern California’s wine country, we believe that coffee has no culinary peer. Over 400 flavor compounds make up the unique aroma and taste that we experience when we smell and drink it. It’s that moment of astonishment at the cupping table when we crack the crust of a coffee with the right combination of those 400 compounds that drives us to find the best and highest quality lots available anywhere.
At Black Oak Coffee Roasters, we seek to express the true origin character of our coffees. Origin character is what tells the coffee’s story most vividly. We look for ripe, voluptuous sweetness and body to carry the coffee’s personality over the palate. And we want our coffee to linger in your head after you’ve tasted it, like a passage from your favorite novel.
