Coffee Tasting Notes
This coffee is largely defined by its round body and balanced structure. Light brown sugar is tempered by herbaceous cola notes and a lively lime-like acidity. The unique combination of these notes can create the impression of honeydew, cantaloupe, and plum.
About The Coffee Producer
This coffee was produced on the Kateshi Estate in the Northern Province of Zambia. Northern Province is located on a high plateau that sits between 3600 and 5200’. The plateau is surrounded by rift valleys that contain large lakes including Lake Tanganyika, which is the second oldest and second largest freshwater lake in the world. Where the rivers drain from the plateau into the surrounding valleys, they create spectacular waterfalls. Perhaps the most stunning of these is Kalambo Falls, a single 772 foot fall, which has been a site of human habitation for at least a quarter million years.
The Kateshi Estate which produced this coffee is located in the northernmost district in Northern Province. The coffee project there was started in 2012 and now features a number of coffee varieties and processing methods. This particular lot of coffee was fully washed prior to an extended stay in a fermentation tank with lactic acid and yeast.
How To Brew This Specialty Coffee
We have had great success brewing this at a 1:14-1:15 brew ratio and 200–205°F water.
