Tanzania Songwe opens with bright notes of red and yellow fruits including cranberry, cherry, bright red apple, and grape. The sweetness, so characteristic of bourbon varieties, moderates with the bright fruit notes to produce notes of dried cherry, golden raisin, and currant. Sweetness rounds out the cup with the flavor of light brown sugar and baker’s chocolate.

About The Coffee Producer

This coffee comes from the Tanzanian side of the Songwe river. More specifically, the coffee is produced by the Iyela farmer group. The group built a processing plant and the equipment necessary to operate a small coffee processing facility in 2016. In 2019 they were able to upgrade their facility to include an eco pulper, which can process more coffee than traditional methods while using far less water, and while producing more consistent, better quality, coffee. 

The producers of this lot grow their crop in mixed clay and loam soil which imparts a great level of depth into the coffee. This coffee is dried over the course of between 12 and 14 days on raised beds, which extenuates the coffee’s complexity. Furthermore, this lot is composed of extremely high quality bourbon varieties, which are renowned for their sweetness, structure, and depth.

How To Brew This Specialty Coffee

We recommend starting with a 1:15 brew ratio. Using more water will help highlight the floral notes, while concentrating the brew will better highlight the chocolate notes. Brew water should be about 200°F.
