Coffee Tasting Notes

This coffee opens with the aroma of red fruit. Bright red fruit notes including raspberry, red grape, cherry, and cranberry combine to create the impression of fruit punch. Heavy notes of dark chocolate and hints of herbaceous mallow and cola join the mix, which create the sensation of dried raspberries dipped in dark chocolate.

About The Coffee Producer

This coffee is grown and processed on the Baroida Estate in the Eastern Highland Province. The estate has been in operation since the 1960’s, when the government of Papua New Guinea began encouraging foreign farmers to help stimulate the economy. Coffee has been cultivated on the land for even longer. The estate is surrounded by coffee trees with their roots in the colonial era. The colonial plantations are all gone, but the coffee trees remain and are now tended by the native locals. In addition to producing and processing coffee grown on the estate, the Baroida Estate serves as a purchasing facility and mill for the coffee grown in the surrounding area. 

Producing natural processed coffee in Papua New Guinea is extremely difficult given the amount of moisture and precipitation in the coffee growing highlands. The area in which this coffee was grown receives just under 100 inches of rain each year. The abundant rainfall and high humidity makes drying coffee difficult, let alone drying coffee with the fruit still intact. Fortunately the Colbran family is versed well enough in both coffee processing and familiar enough with the local weather patterns to produce a small amount of natural processed coffee each year. 

We chose this coffee because it is an extremely delicious and unique coffee that contrasts the classic flavor profile of the Papua New Guinea West Highlands Washed

How To Brew This Specialty Coffee

This coffee performs well with a medium grind, a 1:15 brew ratio, and water between 200-205℉. For best results keep the steep time under 4 minutes.
