This coffee is quite sweet and has relatively low acid for an Ethiopian coffee. The favor is quite complex and varies rather dramatically with different brew techniques. Lemon zest, citrus, white grape, apricot, peach preserves, and jasmine are all present in well-brewed cups of this exceptional heirloom coffee.
In the highlands of Southern Ethiopia, stretching south along a trail of famous coffee areas that are household names for coffee lovers, lies Gedeb. We’re no stranger to this producing area; we’ve sourced coffee from this same producer group for several years in a row. Black Oak has been awarded a great number of awards and accolades with coffees from Gedeb and the 650 nearby family farms that produce these consistently amazing lots.
This coffee is rather fickle in regards to brewing. Over extracting this coffee, or brewing this coffee at too high a brew ratio, masks the plethora of delicious, delicate, flavors this coffee has to offer. We recommend using between a 1:14 and 1:16 brew ratio and steeping with relatively cool water between 185-200℉ for no more than three and a half minutes.
