About The Producer
Finca Las Brisas, owned by Carlos Pola, is a testament to sustainable coffee farming, established in 1997 amid a rich tapestry of indigenous trees and diverse vegetation. Carlos is preceded by 4 generations of coffee farmers, but only transitioned to full-time coffee production in 2012. His goal was to enhance quality control and efficiency in the coffee-making process. The farm houses a dedicated laboratory for experimenting with processing techniques, ensuring both educational support for workers and a commitment to specialty coffee.
Carlos has transformed Finca Las Brisas into a model of ecological soundness, significantly reducing chemical inputs through innovative practices, such as planting nitrogen-fixing trees and fostering symbiotic fungi to improve nutrient absorption.
Cherries are meticulously handpicked, floated to remove under-ripes, and undergo a unique fermentation process that involves resting in shaded conditions at controlled temperatures. Following 48 to 72 hours of fermentation, the cherries are pulped without water and dried on raised beds for 17 to 20 days, monitored closely to achieve optimal uniformity. This careful approach enhances the coffee's structure and profile, yielding a delightful cup that marries intensity with finesse. Once dried, the parchment is prepared for export at Cooperative La Cuzcachapa, all while minimizing environmental impact through responsible water management practices on the farm.
How To Brew This Washed Process Single Origin
A 1:14 brew ratio of cooler than usual water of around 190-200°F yields tasteful, flavorful cups.
