This batch of coffee is a mix of black-honey and natural process coffee. The combination of techniques creates an incredibly sweet, rich, pleasantly fruity cup. The black honey process contributes a fruity chocolate while the natural process adds a variety of ripe fruits such as cherry and jammy stone fruits. There is so much to appreciate about this cup!
About The Producer
This coffee comes from a single farm, Hacienda Sonora, nestled in the foothills of the Poás Volcano. The farm has been operated by Alberto Guardia for nearly 50 years.
His son returned to help operate the farm after earning an engineering degree and working in the field for several years. The farm itself is quite large, encompassing around 100 hectares. 65 hectares are devoted to shade grown coffee, 10 to sugar cane, and the remaining 25 remain a wild forest reserve.
The farm and mill that processed this coffee are powered entirely by zero emission renewable energy sources.
How To Brew This Natural Process Single Origin Coffee
We recommend brewing this coffee with a 1:15 brew ratio utilizing water at 205°F.
