Sweet floral cups of heirloom Ethiopian coffee return
Black Tea, Orange Blossom, Peach
First impressions of these cups center around sweet notes of milk chocolate and black or golden bud tea. Sweet floral notes abound later in the cup and some distinguishing notes include orange blossom, peach, and floral honey. The sweetness is balanced by citrus acidity and notes of orange and lemon zest.
Thanks to changes in coffee export regulations, vertically integrated coffee producers are quickly becoming some of Ethiopia’s top coffee producers. Mijane Woresa is one such producer. Woresa has worked in coffee for more than 30 years and recently took the opportunity to create an export company with his family that allows them to directly export their premium coffee.
This lot is sourced from 410 farmers who cultivate coffee on small plots and deliver their cherry to Woresa’s washing station. On arrival, cherries are carefully hand sorted and floated to separate out less dense beans, depulped, fermented for 48 hours, and washed and classified again in channels. The resulting coffee “parchment” is placed on raised beds where it is hand sorted again and dried over a period of 12 to 15 days. The parchment is also covered during the afternoons to prevent harsh drying in the intense sun.
As a family owned business, Mijane and his family emphasize social impact in the communities where they source coffee. They have invested in more localized cherry collection sites to reduce the transportation cost for small producers as well as helping to fund road construction projects that make travel for everyone a bit easier. They are also responding to the local needs for investing in school infrastructure projects.
The delicate floral and fruit notes in this coffee appreciate lower temperature brewing methods. We recommend starting with a 1:16 brew ratio that utilizes water at ~195℉.
