Las Cuevas features some of the qualities we like most in Guatemalan coffees. Cups open with sweet, slightly vegetal notes, which is akin to the unrefined sugar known as panela that is also produced in this region. Milk chocolate and caramel also dominate the sweet notes of this coffee’s profile, while bright apple and more subtle grape notes round out the acidity. Overall, cups are exceptionally clean, well-balanced, exemplary of Guatemalan coffee.
This particular lot of coffee is from the Quetzaltenango Department of Guatemala, which is situated in the North-West corner of the nation. Abundant rainfall, high altitude growing plateaus, rich volcanic soils, and the influence of the Pacific ocean come together to create ideal growing conditions for coffee. The Bourbon and Catuai varieties that compose this lot are renowned for their sweet, delicious flavor profiles.
This coffee was produced by members of the Federación Comercializadora de Café Especial de Guatemala (FECCEG). The FECCEG is a non-profit organization that provides support for small coffee producers by including access to specialty markets, microfinancing, risk-mitigation financial devices, and general financial planning services. The FECCEG has 1,500 members composed of 1,150 male-owned and 350 female-owned farms from 15 producer organizations, associations, and cooperatives. All members are smallholder farmers dedicated to the organic production of specialty coffees, honey, panela, and cocoa.
