Sweet, rich, and buttery are the first words that come to mind in describing this coffee. The full mouthfeel and copious amounts of dark sweetness make the flavor reminiscent of molasses. As the cup continues to unfold a tartaric acidity balances out the sweetness and opens up into earthy spice notes including fennel, anise, and juniper.
This washed Peaberry comes from locally owned Kimel plantation, located in the Waghi Valley of Papua New Guinea's Western Highlands, and founded in 1974 by Bobby Gibbs. The Kimel River which is located next to the plantation provides clean water. Education is offered to the children and medical facilities are provided for the workers and their families. Kimel Plantation practices environmentally friendly practices, including the use of pulp as organic fertilizer and recycling water.
The sweet and balanced profile of this coffee lends itself well to anywhere between a 1:14 and 1:17 brew ratio. We recommend starting somewhere in the middle and increasing or decreasing the ratio according to personal preference for lighter or more heavily bodied cups and flavor profiles.
